Happy Monday Guys!

Curry and apples and goat cheese, oh my! I’m clearly loving this fig goat cheese that I bought from Harris Teeter. I’ve used it in a salad here, and last week I made a snack with it by putting it on some toast with oven roasted cinnamon green apples, and a drizzle of honey. Happy Monday Guys!

I can officially say I graduate this week. I feel like that just snuck up on me. This past Friday I met up with a couple of friends for a pre-graduation/Cinco de Mayo celebration. We had such a good time. The weather was perfect. We caught up on life, laughed, and ate good food. Precisely what I needed.

Yuzu Ginger Salmon

Hi Guys!

It’s May 1st which means I officially graduate this month! I met up with my officemate yesterday for lunch so we could catch up on life. Since we’ve been in deep dissertation mode we haven’t seen very much of each other this year. It was really nice but sad. She’s leaving the day after graduation so this was our last chance to sit and chat before the big day. We tried out this new poke place in Carrboro called One Fish, Two Fish (yep, like Dr. Seuss. They actually have the quote on the wall). It was my first time trying poke and this was a pretty good intro. I also tried their Hawaiian shaved ice. I got the lemon blueberry. It was quite good but it’s also massive so if you go and get one, take a friend!Today I’ve got a recipe for you – a marinade. I love a good marinade. You put a few ingredients together, let your meat or seafood soak up all the yummy juices, and you end up with something delicious. This particular marinade involves yuzu. Continue Reading

Healthy Banana Milkshake

I must have something special for you if I’m coming to you on a Thursday, right? Well I do. It’s a three ingredient ridiculously tasty and healthy banana milkshake. If you follow me on Instagram you may have already seen this in my insta story a couple weeks ago. Yet another reason you should follow me if you’re not already. You could have been enjoying this milkshake for weeks now!After having a delicious, but not so healthy red velvet milkshake one Sunday, I wanted to have another one the next day. Since moderation is key for me, I knew that I had to pass on seconds. However, I wanted to try to make my own healthy version to satisfy that sweet tooth of mine that just won’t quit. I had some frozen banana chunks and almond milk on hand so I thought I’d give it a whirl.  I threw in some unsweetened cocoa powder to make things a little more interesting. Let’s just say the results far exceeded my expectations. It was oh so good. I thought it’d be pretty good, but not that good. And it was so simple to make. Isn’t it awesome when the stars align like that?!

With the temps warming up this makes the perfect spring treat.

The Farmery: Food Truck Fun

Happy Monday Guys!

If you’ve been reading my blog for a while then you know that as I studied for my comprehensive exams and while I’m currently working to finish my dissertation, I’ve been meeting up with a friend in my program at this co-working spot.

One of our requirements for a good work space was that they sold food nearby, just in case we forgot ours or if we didn’t feel like bringing food. For me it was especially important that they offered healthier options. The place we settled on delivered because stationed right outside they have this cute little vintage airstream that serves delicious and quite affordable food. Even better is that they have a micro farm right beside it and they use what they grow in their dishes. It doesn’t get any more local than that.I’ve gotten four different things off their menu, and they have all been varying degrees of delicious. Continue Reading
