Simple Vegan Warm Kale and Chickpea Salad

Happy New Year Everyone! I hope 2019 has been treating you well. My first post of the year is a simple, healthy, and delicious salad recipe. Truthfully, I came up with it when I had an assortment of random ingredients in my fridge that I didn’t want to spoil. Sometimes you create the best recipes this way. The list of ingredients is short and I realized as I was typing it up that it’s vegan. So if you were inspired by Beyonce and Jay-Z’s challenge to try a plant-based diet in 2019, this salad will get you off on the right foot. Keep reading to see what you’ll need.

Warm Kale Chickpea Salad

INGREDIENTS:

10- 12 oz. of kale (any variety will work)

1 medium sized red onion, diced (not finely diced)

juice from 1/2 of a freshly squeezed lemon

1 15 oz. can of reduced sodium chick peas

Seasonings

1/2 + 1/4 tsp salt

1/2 + 1/4 tsp crushed red pepper flakes

1 tsp Olive Garden’s Garlic & herb seasoning (I love this stuff! I actually just bought more this weekend because I ran out)

1+1/2 tsp of extra virgin olive oil.

DIRECTIONS:

Take 1 tablespoon of olive oil and saute onions on medium heat. Add 1/4 tsp of sea salt and 1/4 tsp of crushed pepper flakes. You want the onions to start to look translucent (about 3-4 minutes).

Next add the chickpeas. Let them cook with the onions for 2-3 minutes.

Then add the kale. I added it in batches. Let one batch wilt before adding the next batch.

Pour the lemon juice in and stir.

Then season everything with garlic and herb seasoning, 1/2 tsp of sea salt and 1/2 tsp of crushed red pepper flakes.

Drizzle 1/2 tsp of olive oil on top and stir.

Let cool for a few minuted before serving.
