  No Added Sugar Cookies Happy Monday Guys! I’m finally sharing my no added sugar cookie recipe from my no added sugar challenge. Sorry for the delay. This thing called life has hit me hard. Work has been hectic with some travel and big reports due and last week I did a somewhat spontaneous trip to NOLA. So much fun! It was a short trip but I feel like I covered a lot of ground. I’ll be doing some posts on what I ate, where I stayed and all that good stuff. And yes, I hit up Cafe Du Monde for beignets! They were just as delicious as I’d imagined.

White Jumpsuit: Post Labor Day Style Rebellion

Does anybody know where that no white after Labor Day rule came from? I personally think it’s a myth. I mean, what’s the justification behind it? White looks just as good on my chocolate skin on the day before Labor Day as it does the day after:) And if you want to get technical, it’s always after Labor Day because there’s the Labor Day from the season before. So then when can you wear your white?? The answer: any time you feel like it. If it’s clean and you feel good in it, wear it! I got this jumpsuit from TJ Maxx for a steal, like $40. Toasted Coconut Plantain Bread Recipe

What’s like banana bread but even better? Plantain bread. And what’s even better than plantain bread? Toasted coconut plantain bread! Being Nigerian I love fried plantains but I don’t eat them often. Boiled plantains are a great alternative for me to enjoy plantain that’s been prepared in a healthier way. I actually just bought some this weekend. When I have them, I usually sprinkle a little cinnamon and sea salt on top and have it with my protein of choice – maybe chicken, shrimp, or salmon and some veggies on the side. Well one day I was dealing with plantains that had gotten a little too ripe, to the point of being mushy. I hate wasting food so I thought, what would you do if you had mushy bananas? You’d make banana bread. So why not make plantain bread. This was the result. Since I like to keep things interesting, I added coconut and fresh ginger to the batter. How to Get Furniture Delivered to Your Apartment

You know you’re an adult when you get excited about furniture assembly. I ordered a sleeper sofa a few months ago but had an issue with delivery. They delivered it to my leasing office instead of my apartment unit. I called the furniture company to see if they could deliver it to my actual  apartment (I’m on the 4th floor), but they said they couldn’t since my leasing office had signed for it. They did let me return it free of charge and had someone pick it back up (but wait, couldn’t you have just delivered it to me though?). Needless to say I was bummed. Continue Reading
